Instructions

 

Preheat your oven to 425 degrees.

 

Place cupcake liners in your cupcake tin.

 

Using a fork, mash the strawberries strawberries.

 

In a large bowl, combine the pancake mix, sugar, milk, egg,  diced strawberries and vegetable oil.

 

Whisk the ingredients together until combined.

 

Pour the batter into the cupcake liners and fill 2/3 of the way.

 

Bake for 15-20 minutes. To check, stick a toothpick in the center.

 

Let the cupcakes cook, about 5-10 minutes.

 

If desired, frost with whipped cream.
