Skillet Rice & Chicken

Ingredients

 

1 lb red potatoes

 

1 teaspoon Delicioso oil

 

1/2 teaspoon garlic powder

 

1 teaspoon salt

 

14 oz. fresh pork Italian sausage

 

1 onion

 

4 cloves of garlic

 

2 sweet bell peppers

 

2 cups fresh green squash

 

 

 

 

Instructions

 

Cut the red potatoes into small, diced pieces.

 

In a large skillet over high heat, heat oil and add in the potatoes.

 

Add salt, dash of pepper, and garlic powder to the skillet.

 

Cook the potatoes for about 3 minutes.

 

Reduce the heat to low and cook for an additional 25 minutes.

 

Remove the skillet from the stove and let stand for about 5 minutes. Transfer the

potatoes to a separate plate and set aside.

 

Slice the sausage into small pieces and add to the skillet. Sauté over medium heat

for about 10 minutes, or until the sausage is golden brown.

 

Chop the onion, peppers, and garlic and add to the skillet. Cook until lightly browned.

 

Chop the squash and add to the skillet. Cook for about 5 minutes.

 

Add the potatoes back into the skillet and cook everything for a final 5 minutes,

adding salt and pepper as needed.
