Bacon and cheese frittata

Ingredients

 

- Oscar Mayer turkey bacon or Jamestown Bacon

 

- 6 Grade A medium eggs

 

- 1 cup Almond Breeze or Lactaid Milk

 

- 2 tablespoons unsalted butter, melted

 

- 1/2 teaspoon salt

 

- 1/4 teaspoon pepper

 

- 1/4 cup green onion

 

- 1 California red pepper

 

- 1 cup Farm Fresh cheddar cheese

Instructions

 

Preheat the oven to 350 degrees.

 

- Using butter, grease a medium sized baking dish. Set aside.

 

- In a large skillet over medium heat, cook about 5 or 6 strips of bacon. Book until

evenly browned, flipping occasionally.

 

- Once the bacon is cooked, remove from heat and place on a paper towel to allow the

extra grease to drain.

 

- Cut the bacon strips into small, penny sized pieces

 

- In a separate bowl, add 6 eggs, 1 cup of milk, 2 tablespoons of melted butter, 1/2

teaspoon salt, and 1/4 teaspoon of pepper. Whisk until everything is combined.

 

- Chop 1/4 cup of green onion and 1 red pepper and add to the egg mixture along with

the bacon bits.

 

- Mix together until combined.

 

- Pour the mix into the prepared baking dish.

 

- Top with shredded cheddar cheese if desired.

 

- Bake for about 30 minutes, or until an inserted toothpick comes out clean.
